I made these today and was able to eat whipped cream cheese. Small step. Big smile. Which I needed because when I woke this morning I was exhausted. I still wanted to bake and boy am I glad I did because baking makes me happy, and happiness is a HUGE factor in me getting better. Just knowing that my immune system is improving (even though I'm still pooped), gave me that extra boost that I needed today.

Hope you get your dream pie crust, soon. You could always just make one with seed and nut flours. That's what I do.

DeleteThat's great! I hope you sleep well tonight and have loads of energy tomorrow.
ReplyDeleteThat would have been wonderful.
DeleteWow! Feel better! Imagine what you will be able to do when you feel better!
ReplyDeleteRight now I'm just happy with this :-)
DeleteDelighted to hear it. Whipped cream cheese, never tried that one. I wonder why not. Glad you could eat it OK.
ReplyDeleteIt's similar to regular only I find, not as sour and has air whipped into the cheese to make it fluffy and light. Rather than a solid brick or tub.
DeleteThat's great, Ivy! :)
