Badass ... Not so Much

Remember how I was gonna get all badass on that stack of coupons yesterday? Get 'em clipped and put away? Well, that never happened.  Instead, I wrote a new waffle stick recipe, along with making these rolls.

62.5% strong white and 37.5% spring wheat.  My goal was to add some brown, but retain the softness of the white. 

Happy to say, it worked.

I'd show you a picture of the sticks, but Tim ate them all.  Well, not all, but he did eat MOST of them.  Meanwhile, it's a new day and I need to get my coupons clipped. 

Right after I work on my Pepperoni & Cheese Bites.

  3. mmm cheese bites..... I find that adding mineral water usually makes the brown flour softer in the end

    1. Interesting, never baked with mineral water.

      I make these 50g rolls in all white for sliders and they are super good. But I wanted to add just a touch of brown.

    2. a cup of mineral or sparkling water on two cups of flour is the measure. And a few tbsp of butter or oil.

      I mostly use everything only in brown :) Brown rice, brown sugar, brown flour :)

    3. I use oil to knead but never bake in cups. Only grams. Mine come out pretty soft though. Lots of kneading time and proper fermentation, goes a long way as well.

      Love wholemeal flours, so wonderful. And the taste of them, fantastic. But I will play with strong whites as well.

    4. And I saw on Cupcake Wars, they used seltzer in their cupcakes for a different texture. Very fun, all these different liquids to play with.

      I don't know what mineral or sparkling water really are, but I'll keep a look out for a coupon and/or sale. Thanks.

    5. Carbonated water also known as club soda, soda water, sparkling water, seltzer water, or fizzy water. We call it mineral water because it is taken from the springs of water containing lots of minerals and then sold like that bottled or carbonated with little bubbles in it :)
      I'm guessing over in US you don't have a habit of drinking it, but here in Europe it's drunk on a daily basis. Those waters have lots of calcium, magnesium, iron and other minerals in them and are healthy.

    6. Dezmond: We all ALL of those same waters here, but I've never used them aside from making my own pineapple pop, one time.

      For my bakes, I use local spring water. Before that, I used our own well water, but they closed the well. So I had to go to bottled local spring water.

    7. I've made my famous whole wheat savoury muffins for dinner today: 2 cups of whole wheat flour, 1 cup of seltzer water, two-three tbsp ketchup, 5 tbsp vegetable oil, 1 small diced red onion, one diced soy hotdog or salami, and tsp salt and you spoon that into 6 medium muffin forms.

    8. Very nice. I like how you make small batches. That's what I do as well. For one, it's easier to test them and two, I get to make something new again the next day.

  6. My coupons are still waiting as well...and I don't bake and I only cook if I have to. So what's my excuse? I was trying to find hatching eggs to buy. Mission accomplished :) lol

  7. I would send you my stack of pages and pages of coupons, since I don't save but only the ones that are $1. or more off. Seems to me, that you would have to buy more products just to save a few cents...here, and there! In our supermarkets are the real 'deals' ...every week they have a huge stack of 'buy-one, get-one free' on really great products, Just one day this week I spent like less than $50. and saved $19.98 on those products that I can use a 'free one'...I have so much peanut butter, veg. oils. wine, bread, which I froze...etc. etc.!

    Love these yummy dinner rolls you posted, and would love the breadsticks!

    1. Sounds like you get some good deals too. I love couponing. Many of my local stores double coupons, which makes, at least for me, 75/1 coupons, valuable.

      Thankfully, I don't buy products that I don't need and I don't buy into the buy more than I use/need to save.

      It's a game. Play it right and it's a profitable and super duper fun game.

    2. In SA the Gluten Free market hasn't yet been flooded with fantastic GF products... so I can't make anything wonderful with these sub-standard products. There is a store though, that makes amaing gluten-free cookies.
