I eat fermented veggies for my gut bugs but up until this week, I bought them. Now after making my first jar there's nooooo going back. Sooooo many combinations. Sooooo much fun. And soooo soooo much cheaper.
Friday Question: Do you like fermented veggies?
Pickles and beets are the only ones we have had...

DeleteThere has been quite a lot about fermented vegetables in various magazines, article etc. Apparently they have been popular across cultures for centuries, but fermenting has made a fashionable comeback as a provider of 'good' bacteria that contributes to a healthy digestive system.

Every once in awhile my grandfather used to buy a big honkin' jar of sauerkraut and eat it right out of the jar. Didn't even bother to put it on a plate. He just got cravings for it.

DeleteWhat is the difference in fermented and pickled. I eat pickled pickles, pickled beets, Kimchi, kraut, etc.
ReplyDeleteGreat quesion and I'm still learning but from what I understand, my fermented veggies have live bacteria where in pickling, the bacteria is killed. However, if heated my fermented veggies, or even put them in a stew, the bacteria will still die.

PS: Jarred or canned stuff are safe to store room temp but ferments, once they reach the right place, are stored in the fridge or underground, in a root cellar or somewhere cold.

I think the only fermented vegetable I've had is sauerkraut (unless pickles count). With a predominately German population around here, I think it's pretty popular. One of the nearby towns even calls its yearly celebration Sauerkraut days. But I've never really liked it myself.
ReplyDeleteOh my gosh, I'd love to taste sauerkraut days. There's a German fermenting vessel that's supposed to very good, too. But I haven't looked into pricing yet.

Polish, Hungarian and Ukraine. So we always had them as well. And yet ... this is my first time making them. Even though I was raised on homemade. What took me so long, I have no idea. But there's no going back now.
