Cornbread Muffins

Ages ago, I wrote a formula for cornbread.  I wrote several.  Tested them, one by one.  Then back to the lab for another draft.  Only this time, I accidentally doubled my butter.  Even though I wrote it for half the amount, I still doubled it.

Turned out to be the best cornbread muffins, I ever made.

I love it when stuff like that happens.

    Bard: I really have to get back to writing recipes so that other people can read my steps and understand them. As opposed to the hand-written notes I have now - which are sometimes, scribbles.

  7. Desert Scribe: Love, love, love using hot peppers in food. So yummy. Just made bagels with chili flakes for a mild kick.

    But these guys went without because I like the sweet taste of the corn and cream together.

  13. Doubling the butter even helps when using a pre-made boxed corn bread mix. I have found that to be the case, at least.
