STEEL PAN (now with more aliens)

Dig my new steel pan. I have a few of these in different sizes and I LOOOOOVE them. This one though, I bought special for dessert bakes because I never baked desserts in any of the others and I wanted to see if it would work without oil, grease and/or bake paper. 

It did. 

Sorta. 

My fault really, I was writing a new bake with new times, temps and using a new pan. Not something I normally do. I try to keep it at one change per draft, that helps me pinpoint and problem solve. 

Anyway, the baked bits popped out just great. Loved it. The underbaked part in the middle, well, that didn't flip and instead left a hole in the middle of the double chocolate yoghurt bake. 

Think Alien, bursting from the chest. 

Lots more experiments coming up and what I really love, is that there's nooooooooo non-stick coating and this isn't aluminum. It's textured steel, and from what I understand that texture helps release foods. And boy does it ever do a dandy job roasting veggies, warming maple popcorn, spicy pop corn and even baking homemade granola. 

The prices at HomeGoods/HomeSense make it so I can afford to keep this new one for all things dessert bakes and keep using my old one for everything else. And, if that wasn't enough to knock my socks off, those little helper handles make it easy to hang these on my kitchen pegboards. 

Hot dog. Life is good.  

And that my Boogerbutts wraps up this post. It's our anniversary weekend and today is last day of it. Gonna make some good eats and enjoy what's left of the weekend. 

Weekends sure go fast. Whoosh.

  8. The pan looks lovely, but I won't be buying any, I have enough baking pans already. I remember when I was young, if a cake "lost" its middle or "sank" while cooling, sometimes the gap would be filled (once the cake was cold,) with whipped cream and chopped fruit. Other times the cake would just get served pre--sliced so no one noticed.

    1. Hey River! I was writing a new formula and the temps were too high for it. So it was either have a wee bit be raw or all of it be burnt. The good news is, don't bake desserts with eggs so we were able to safely eat the underdone bits. Was good too. LOOOOVE the whipped cream and chopped fruit idea. That's a good one!

  10. sounds good to me. I have one real steel, textured I think, that is older than 80 because there was never a time it was not in my mothers kitchen, and since she died in 1990 in my kitchen. it is a 2 square pot and I use it almost every day as did she... I also have two I think is steel pots but might be aluminum that was hers, both are huge, for soups and chili. i only have 5 pots, and 3 of them were hers.

  11. I have never seen a pan like this before. How interesting. This would be awesome for those times when I absentmindedly put things in the pan and realize I forgot to spray it first. Happy belated anniversary to you and your husband.

    1. If you guys have a TJ Maxx or it might be TK there, I'm not sure. Both stores carry them. They come and go throughout the year. Very nice in the oven for the larger ones and the wee small ones work nicely in the air fryer.

  17. Like you I don't want aluminum and I don't want coatings. I'm not familiar with steel pans. Is it stainless steel? I'd like to get one to try and make pancakes without oil. Happy Anniversary .

    1. Hi! Yes, it's steel, textured. Very nice. Only good for the oven and the small ones work in the air fryer. Have you tried some of the textured steel skillets on the market? There's a few popping up. I don't know if oil is needed on them or not. QVC recently had some on David in the Kitchen. I don't know what the texture is made of. I tell you, I'm sick of these companies with their non-stick coatings.

      I did recently get a Lexi Home small skillet for clearance at TJ Maxx. I don't know for sure what it's made of and I haven't made pancakes yet.

      Also, back in the day, I used these Italian flat pans that worked well for pancakes with no oil.

  18. I am glad you like these steel pans so much. Getting the right type is important to our cooking results, after we’ve worked out a few things. I often find it takes a couple of tries with me, or two, or three, lol. I really am loving you telling us about your experiments and love your humor. Happy Anniversary! Have a great time!

      Yes, I agree with you on the tries. I was testing a new formula (bake), that I wrote and the temps were too high. It was either burn the entire cake or just have a wee bit underdone in one spot. Good news, none went to waste. I don't bake desserts with eggs so we safely ate the underdone while it was warm.

    1. They are fun to use. Maple popcorn is very easy. Once the air popped corn is done and cooled (or not depending), I use a squeeze bottle of local down the road maple with some pink salt to taste and then very lowish (depending on oven), place the popcorn in there. Taking care not to burn. I also do this in the air fryer as well. On a lower setting. Very, very tasty. And, if you like spice, there's a touch of cayenne pepper too. That can get hot quick though.

    1. Thank you! I think HomeSense in your area should have them. They pop on the shelves throughout the year. Good for the oven and the wee ones are good in the air fryer. Very nice pans. I love them.

  24. happy anniversary!!! all of my pans are for a specific dishes or deserts. i don't buy anymore "stuff"!! i have no more room and less desire. BUT i do love home goods!!!
