Made another batch of brownies yesterday using a recipe I found in a brownie book. I thought they'd be good because they called for almond meal and I use that in many of my own formulas. Only they weren't good. And after eating them I got a horrible headache.
I didn't like the headache, but what I did like is the technique of folding whipped egg whites into the brownie batter. I've used egg whites for other applications but never brownies. I'll happily use that trick again. But for right now, I'm brownied out, as I'm not a big brownie eating fan.
In other news, today I'm fixing to use an idea I have to make Halloween Mummy Dog Biscuits. If it works I'll post it.

we always whip the whites separately when making sponges and cakes and ad them to the rest of the batter in the end.... The only time I don't do it is when I'm making a savoury cake or roll with savoury sponge....
ReplyDeleteYeah, I've done it before Dez, just not ever with a brownie. Not big into brownies but I'm learning them because Hubby loves them.
DeleteI prefer them to sponge cakes because they're creamy and moist! But I don't like them with too much chocolate or cocoa
DeleteIt's interesting because back when I as a prep cook, some liked the brownies burnt and some moist, some like over-baked on the outside and under baked on the inside. Very much a mix.

no, it's just that the mix of the sour taste of cheese and sweet sugar isn't something inviting for me :) There's a trend of using sour cream mixed with sugar as icing for cakes too, and I hate it as well... I will eat cheese and sour cream only in savoury meals.... But I generally don't tend to eat cheese.... at least not soft cheese.... I do like the ones for pizza....

Pizza cheese, that is nice. Have you tried Muenster cheese on pizza? I love it. Mild but tasty.
Sorry about the dodgy batch of brownies. It's so disappointing to make something you think will be good and discover it isn't.
ReplyDeleteI don't find it disappointing. It's all part of learning and trying something new. I could have done without the major headache, but learning to use whips in brownies was great fun, since I never thought to use the egg whites there.

ReplyDeleteToo bad about the brownies. But when you can't eat something, you just can't. In any case, you've learned something from that and that's good. Always a lesson in everything, I say.
