That's a good question and one I will do a longer post about down the road, but for now, I find sorghum easy to work with. It spreads easily which makes it great for pancakes, waffles and gravy/sauces. Eggs help too, along with a little coconut flour or some homemade flaxmeal.
DeleteBut on the whole, it's a lovely lovely ingredient to play with. Though I haven't made any yeasted breads or quick breads with it yet. But when I do, I will write you an email and let you know how it goes.
But I digress, as for pancakes, it's one of my top choices for pancake or griddle cakes.

DeleteI haven't been to a pancake house in years. I love them but they always sit like cement in my tummy then. What colors did you pick?

DeleteWe went with a blue but I cannot recall the name off hand (at Barnes now and the sample paint jar is in the car).
We're going for a Batcave style bedroom. Not with the bat signal, but a darker cave-like place to hide.
