Today's Lunch Kicked Butt

Today's lunch kicked butt.  A big bowl of Broccoli & Chipotle Cheddar Soup.  Made from little bits I had left in the fridge.  Tossed in Muenster at the end, and I'm glad that I did.

So flippin' good.

Meanwhile, I had a great morning writing and testing bakes.  Can't wait to get up tomorrow and do it all over again.

So ... what's for lunch at your house/office/kitchen?

  2. My lunch was yummy, but boring--Campbell's Italian Wedding soup and Ritz crackers.

    1. I made that a few times at work, when they had me prep, hot side. People really dig that soup. And those little meatballs are fun. Even though ours were buy-in meatballs, they were bad for what they were.

  3. Well, I'm at work so I buy my lunch. Probably a Subway sub and diet Coke today, I think.

  4. I actually had cauliflower soup for lunch. Saved the cauliflower itself and will make a gratin tomorrow with sour cream.

    1. Yum on the cauliflower. I love when they go onsale. If I had some, I would have happily dumped it in my soup pot today.

      Any bread with your soup? I have a slicing loaf in the oven now, as part of my morning test batch work.

    2. I don't eat much bread. Pastries and flour aren't really good for health, so I eat maybe a bread a week.

    3. Nothing wrong with a good wholemeal loaf. That's what we had tonight. New formula and loaf pan, I'm working with.

      How about all that mayo and pickled veg? With the overload of salt in the pickling and the fatty fat in the mayo?

    4. I don't eat mayo too often and I eat the vegetable based one, without eggs :) We pickle our vegs ourselves without too much salt and without conservatives

    5. I used to eat vegan mayo, but it still had lots of fat, but I enjoyed it and really, I believe all things in moderation.

      Nothing like canning veg - just for me, I don't care for the overly salted home-canned veggies. But I LOVE the spicy Hungarian peppers when canned. So good.

  7. Oooo, yummy. Lunch at my house was a fistful of turkey breast and almonds, shoved in between nursing sessions (had a sick kiddo).

  8. That looks like a yummy soup. Love adding cheese to soup, it makes it so good! Today I had leftover chicken and rice for lunch, pretty good. :)
